Gofio canario or canarian gofio is sort of a flour made out of corn that adds flavour to some local dishes. The corn is finely ground and the texture is similar to regular flour although the flavor is very different.
At Villa de Santa Brígida, which is a suburb on the countryside of Gran Canaria, you can find San Pedro's gofio mill. It is a small place where canarian gofio is being made everyday.There you can visit and see in first person the whole process of how they make gofio canario.
Back in the day canarian gofio used to be a main part of the canarian diet especially in the rough times where products from outside the islands were a scarce good.
Now it is cooked into many forms to add up some flavor to particular dishes, to make deserts, or just to make meals from itself. Even though it may seem a rare thing to see, it actually tastes quite good especially in the local dishes. Some locals even mix it with milk to have it in the morning since it provides a great amount of energy.
